Although we may not be able to celebrate Halloween this year like we normally do..., that doesn't mean we can't get into the Halloween spirit! Get into the spooky spirit this halloween and impress your family with these halloween themed burgers! They're not only delicious, they're healthy too! Beware! They may even scare you!
Homemade Veggie Patty: Ingredients: 1 can black beans 1 cup roasted sweet potatoes (2 large sweet potatoes) 1 small sweet onion (chopped) = approximately 1 cup Hand full of chopped kale or spinach (we used kale) 2 tbsp chopped parsley 1 tsp salt ½ tsp smoked paprika Dash of black pepper 1 tbsp olive oil 2/3 cup gluten free flour (we used Bob’s red mill 1:1 Baking flour) 2 tsp curry powder Directions: Roast your sweet potatoes first!
Making the patties:
Assembling burgers: Ingredients: 4 cooked veggie patties 4 slices cheese of your choice 4 burger buns (we used GF) Mayonnaise 4 romaine lettuce leaves, halved 1-2 large pickles thinly sliced lengthways Ketchup 1 Large tomato 8 olives stuffed with pimentos 3-4 Bamboo skewers cut into 3 pieces each (about 3-4 inch long) -- You will need 8 of these
